Ingredients
One tablespoon of mustard oil, one-fourth mustard seeds, 5-6 curry leaves, one cup of potatoes, 3-4 green chillies, 1-2 dry red chilli, salt as per taste, a pinch of turmeric, half a teaspoon red chilli powder, and half a teaspoon chaat masala.
Prep the potatoes
Take the potatoes and cut them into bite-sized pieces. Pat dry the potatoes on a paper towel to remove moisture.
Temper the spices
Heat mustard oil in a pan and mustard seeds, curry leaves, green chillies, and red chillies. Cook them until it start to sputter.
Cook potatoes
Now, toss the chopped potatoes to the pan, coat them nicely with the spices. Cook it starts to get crispy
Add spices
Now, add salt, red chilli powder, and turmeric powder over the potatoes. Mix it evenly, and cook it until golden brown and crispy.
Serve
Garnish the potatoes with chopped coriander leaves on top. Enjoy it as a snack or pair it with roti or rice.
