Two tbsp oil, one tbsp ghee, one tsp cumin seeds, one-inch ginger, 3-4 garlic cloves, four onions, half tsp turmeric powder, one tsp coriander powder, one tsp red chilli powder, two tomatoes, two tbsp curd, 250 gms mushrooms, one-fourth cup wheat flour, one tsp oil, one tsp ghee, one bay leaf, one-inch cinnamon stick, one clove, four black peppercorns, one green cardamom, one black cardamom, one onion, one tsp red chilli powder, salt, kasuri methi, 3-4 coriander sprigs, 2-3 coriander sprigs.
Prepare the Mushroom and Spices
Rinse 250g mushrooms with wheat flour. Take a saucepan and heat oil, ghee, and whole spices like cumin, cinnamon, cardamom, and peppercorns. Stir it well.
Mix Onions, Garlic, and Ginger
Add sliced ginger, garlic, and onions to the pan. Cook till it gets golden. Add turmeric, coriander, and red chilli powder. Stir it well.
Add Tomatoes and Cook the Base
Add chopped tomatoes and cook till it gets soft. Mix in beaten curd. Kindly Allow it to blend with the spices and form gravy.
Add Mushrooms and Simmer
Add the rinsed mushrooms. Cook for five minutes. Add salt, kasuri methi, and water. Let the curry simmer for ten minutes.
Garnish and Serve
Garnish with fresh coriander sprigs. Serve it hot with rice or naan for a delicious, comforting meal. Enjoy the mushroom curry!
