Ingredients
4-5 walnuts, three-fourth a cup of coconut or desiccated coconut, 3-4 Kashmiri red chillies, one teaspoon of tamarind paste, a pinch of hing or asafoetida, salt to taste, two tablespoons of coconut oil, 5-6 curry leaves, and one teaspoon of mustard seeds.
Roast walnuts
Take a pan and add walnuts to it. Dry roast the walnuts on a medium flame until golden brown for 4-5 minutes.
Grind spice mix
Add grated coconut, red chillies, tamarind paste, hing, and salt to a mixer. Grind it into a smooth powder.
Add walnuts
Now, add roasted walnuts to the mixer with 1-2 cups of water. Grind it until it smooth and creamy.
Prepare to season
Heat coconut oil in a small pan and add mustard seeds with curry leaves to it. Heat the oil until it starts to sputter.
Add the seasoning
Add the prepared over the smooth chutney paste. Stir it well to combine and pair this chutney with dosa or idlis.
