Healthy Vegetable Bean Soup Recipe

One can never go wrong with soups in their menu when inviting guests over for dinner. Feel enriched with this creamy veggie soup that will just keep the party going.


Key Ingredients: Pinch of thyme (ajwain ke phool), salt and pepper as per taste, 1 litre of vegetable stock, 1 celery stock (finely chopped), 1 garlic clove and 1 onion (diced), 1 chopped carrot (optional), 500 grams of white beans, 4 teaspoons of tomato puree, 1 chopped tomato, 50 grams of white butter


Stir butter, onions, carrots, garlic and celery for 10 minutes. Next, add the remaining ingredients and let it simmer for 30 minutes or so. Garnish your soup with parsley leaves and serve!


Nutri-Check: Beans prevents cancer and is beneficial for diabetic-patients as it traps the cholesterol forming cells and absorbs it. In other words, it prevents the direct assimilation of cholesterol in the body!
