Try these healthy salad and beat summer heat

Summer is the time to stay cool and healthy, which is indeed a very difficult task with such hot and humid weather. However, with scorching heat, summer gives you the opportunity to gorge on the delectably refreshing treat. Let’s make healthy salad with summer fruits and vegetables and beat summer heat.

    Goat cheese and peach salad

    1 tbsp olive oil, 1 tbsp chopped onion, 2 tsp red wine vinegar, 1/2 tsp honey, 4 cups mixed baby greens, fresh herbs (basil, parsley, or tarragon), pit removed and sliced, 1 peach, 1 ounce soft goat cheese.

    Now, toss first four ingredients in a bowl then add rest of the ingredients. Top with black pepper.

    Fresh cucumber salad

    1 tbsp olive oil, 2 tbsp cider vinegar, 1 tsp sugar, 1/2 tsp salt-free herb blend, Pepper, to taste, 1 large cucumber, peeled and thinly sliced, 1/2 red onion thinly sliced.


    Mix first five ingredients in a bowl and then add the rest of the stuff. Serve Fresh.

    Caprese salad

    1 1/2 Cherry Tomatoes, cut in half, 1 Fresh Mozzarella, Large cube, 1/2 Fresh Basil Leaves chopped, 1 1/2 Tbsp Olive Oil, 4 tbsp Vinegar.

    Mix all the ingredients together, and then refrigerate for about an hour and serve cold.

    Feta and watermelon salad

    Dressing

    1 zested and juiced lemon (use one tsp), ½ bunch cilantro or 1 bunch parsley, leaves only, chopped, ½ cup fat-free Greek yogurt, ¼ tsp black pepper

    Salad

    5-6 cups cubes of seedless watermelon, 2 stalks of sliced celery, 1 thinly sliced red onion, ¼ tsp black pepper, 2 tbsp of crumbled feta cheese

    Take a small bowl and mix all the dressing together. Now toss in all the rest of the salad ingredients with the dressing.

    Summer salad with chicken & berries

    3 cups of mixed salad greens, 2 tbsp homemade vinaigrette, 3 ounces of chopped sautéed chicken breast, 1/4 cup of finely chopped onion, 1/4 cup berries, 5 or 6 walnuts
     
    Toss all ingredients with the dressing in a large bowl. Serve fresh.
