Eggs are easy-to-make, inexpensive and protein-packed solid diet loaded with amino acids, antioxidants and iron. If you can’t think outside the scramble, here are seven easy ways to switch it up.

    On a pizza

    Put to use your favourite homemade pizza recipe and bake pizza until it is almost cooked. Carefully crack eggs (as many as you like) on the pizza and return to the oven. Make sure you cook the whites perfectly but leave the yolks just a bit runny.

    On a burger

    There’s a reason almost all burger places in the city have come out with an egg burger. The healthy egg can replace the mayonnaise and give your burger a strong punch of protein with loads of flavour. Prepare your burger just the way you like it and top your tikki with an over-easy egg. Runny yolk lovers can just let it break and run over everything inside the burger.

    Healthful scramble

    When a variety of things are lying in your refrigerator but you don’t know what to do with them and of course can’t let them go waste, prepare a kitchen-sink scramble. Take a pan and sauté leftover vegetables and meats. Once they are done, just throw in some eggs and cheese at the end. Creativity can’t get any tastier.

    Fried rice

    You could use eggs to give a savoury twist to your favourite fried rice. Stir-fry vegetables in oil until they are soft, and then add a few beaten eggs. Once half-done, add leftover fried rice, white or brown, to the mix and cook until everything turns golden. Soy sauce and sesame oil are good options to add to finish the preparation.

    This dish will remind you of your childhood. If you’ve forgotten how to do it, allow us to remind you. Simply cut a hole of whatever shape you like in a whole-grain bread slice. Place the slice on a hot pan with oil and crack an egg over the centre hole. Flip when the first side turns golden.

    Shakshuka

    This Arabic dish might sound exotic, but is super easy to make. With a healthy dose of nutrients, it is full of hearty flavour. Use fresh or canned tomatoes to make tomato sauce and add onions, garlic, peppers, cumin and hot pepper flakes to it. This mix will create a bed for the eggs to be poached in. Add eggs to the sauce, and cover to cook. Eggs combined with lycopene-rich tomatoes pack a nutritional punch.

    Egg salad-cum-sandwich

    You can lighten up your salad by replacing mayonnaise with mashed avocado; it will add new twist and a dose of heart-healthy fat to your old-fashioned favourite salad. So will eggs. Chop fresh herbs, add mashed avocado and a generous squeeze of lemon along with a pinch of salt and pepper. Add shredded boiled eggs to the salad. You can add toast to this salad, turning it into a gooey, sumptuous sandwich.
